Ferrous Ascorbate salts may be better tolerated than the corresponding weakly acidic ascorbic acid. Ascorbates are highly reactive antioxidants used as food preservatives. In pregnant women, the incidence of pyrolysis and chronic constipation is slightly increased. Ferrous-ascorbate is known to form with nitric oxide paramagnetic nitrosyl ferrous-ascorbate complexes, Fe-AA-NO. These complexes yield on EPR signal with g-factor close to 2.02 and an optical absorption spectrum with maxima at 340, 460, and 600 nm. Fe-AA-NO complexes are unstable in the presence of oxygen. Ferrous-ascorbate complexes promote NaNO2 decay resulting in the formation of NO. Nitric oxide is taken up by Fe-AA complexes to form paramagnetic ferrous-ascorbate nitrosyl complexes, Fe-AA-NO. It is suggested that ferrous-ascorbate complexes can play the role of carriers of NO and, perhaps, O2 in the blood plasma. Nitrosyl ferrous-ascorbate complexes can also be the NO containing factor involved in the blood vessel relaxation.

Ferrous Ascorbate is a synthetic molecule of ascorbic acid and iron. Ascorbic acid enhances absorption of iron. Ascorbic acid reduces ferric iron to ferrous iron which remains soluble even at neutral pH. Ascorbate is a reducing agent and prevents Oxidation. Thus maintains Iron in highly soluble ferrous form. Ferrous form is absorbed thrice as much as ferric form of iron. Ferrous ascorbate has the advantage of providing both ferrous ion and ascorbate in the same compound. There is no dissociation of ferrous ascorbate on entering GI Tract due to the stable chelate of Iron with Ascorbate. There is greater absorption of iron in vivo from ferrous ascorbate [Fe(HL)2] as compared with ferrous sulfate. Ferrous ascorbatete is a devoid of gastric acid pH. There is no dissociation on entering GI Tract due to the stable chelate of Iron with Ascorbate. Also there is no action of food inhibitors as the complex does not dissociate. Ascorbate is a reducing agent and prevents Oxidation. Thus maintains Iron in highly soluble ferrous form.
